Preheat oven to 400°F degrees.
Using your Mandolin, sliced parsnip as thin as possible. Place sliced parsnips in mixing bowl and toss with oil. Place parsnip slices on your bonMat (which is on top of your perforated baking sheet) in a single layer. Sprinkle with Sel Gris salt.
Bake for 10-15 minutes (time depends on size of parsnips but typically it takes closer to 15 minutes but I like to check after 10 minutes to make sure none of them get overcooked). If you have smaller pieces, they will cook faster and you may have to remove them from the bon Mat earlier than the other pieces.
