Mango Lime Potato Salad

Course Salad


  • 10-12 small red potatoes
  • 1 ripe mango
  • 2-3 tbsp Tahitian Lime Oil
  • 2-3 tbsp Mango Balsamic
  • 4 green onions diced


  • Place washed potatoes whole in your Large Round Mold and Cover with your Octagonal bon Mat. Microwave on high for 10-13 minutes (time depends on each microwave).  
  • While potatoes are cooking, use your Eco Chop to make the vinaigrette. Cut the mango into chunks that fit in your Eco Chop, add oil and vinegar and blend well.  Dice green onions with your Santuko Knife.  
  • Once potatoes are cooked through, use your cake server knife to cut potatoes into quarters. Mix in vinaigrette and green onions.
