Watermelon Spinach Arugula Salad

Course Salad


  • 4 cups fresh baby spinach and/or arugula
  • 3 cups cubed seedless watermelon
  • 2 cups cubed cantaloupe
  • 2 cups cubed English cucumber (chop in Eco Chop)
  • 1/2 cup fresh cilantro (chop in Eco Chop)
  • 2 green onions (use scissors to cut these)

Mango Lime Ginger Dressing:

  • 1/4 cup Mango White Balsamic
  • 1 tbsp lime zest (use LePetit Grater)
  • Juice of 1 lime (use Citrus Press)
  • 2 tbsp Tahitian Lime Oil
  • 2-3 tsp freshly minced or grated ginger (use LePetit Grater)
  • 2 garlic cloves (dice in Eco Chop with cilantro)
  • 2-3 tsp Sel Gris sea salt & pepper to taste


  • Prepare Salad ingredients and toss in mixing bowl.  In a separate mixing bowl, whisk the dressing ingredients together.  Add dressing to lettuce and fruit and toss to coat evenly.
