
Watermelon Spinach Arugula Salad
Ingredients
- 4 cups fresh baby spinach and/or arugula
- 3 cups cubed seedless watermelon
- 2 cups cubed cantaloupe
- 2 cups cubed English cucumber (chop in Eco Chop)
- 1/2 cup chopped fresh cilantro (chop in Eco Chop)
- 2 green onions, chopped (use scissors to cut these)
Mango Lime Ginger Dressing:
- 1/4 cup Mango White balsamic
- 1 tablespoon lime zest (use le petit grater)
- Juice of 1 lime (use citrus press)
- 2 Tbsp Tahitian Lime Oil
- 2-3 tsp. freshly minced or grated ginger (use le petit grater)
- 2 garlic cloves (dice in Eco Chop with Cilantro)
- 2-3 tsp. Sel Gris sea salt and pepper to taste

Instructions
Prepare Salad ingredients and toss in mixing bowl. In a separate mixing bowl, whisk the dressing ingredients together. Add dressing to lettuce and fruit and toss to coat evenly.
