Watermelon Spinach Arugula Salad
- 4 cups fresh baby spinach and/or arugula
- 3 cups cubed seedless watermelon
- 2 cups cubed cantaloupe
- 2 cups cubed English cucumber (chop in Eco Chop)
- 1/2 cup fresh cilantro (chop in Eco Chop)
- 2 green onions (use scissors to cut these)
Mango Lime Ginger Dressing:
- 1/4 cup Mango White Balsamic
- 1 tbsp lime zest (use LePetit Grater)
- Juice of 1 lime (use Citrus Press)
- 2 tbsp Tahitian Lime Oil
- 2-3 tsp freshly minced or grated ginger (use LePetit Grater)
- 2 garlic cloves (dice in Eco Chop with cilantro)
- 2-3 tsp Sel Gris sea salt & pepper to taste
