Watermelon Spinach Arugula Salad


  • 4 cups fresh baby spinach and/or arugula
  • 3 cups cubed seedless watermelon
  • 2 cups cubed cantaloupe
  • 2 cups cubed English cucumber (chop in Eco Chop)
  • 1/2 cup chopped fresh cilantro (chop in Eco Chop)
  • 2 green onions, chopped (use scissors to cut these)

Mango Lime Ginger Dressing:

  • 1/4 cup Mango White balsamic
  • 1 tablespoon lime zest (use le petit grater)
  • Juice of 1 lime (use citrus press)
  • 2 Tbsp Tahitian Lime Oil 
  • 2-3 tsp. freshly minced or grated ginger (use le petit grater)
  • 2 garlic cloves (dice in Eco Chop with Cilantro)
  • 2-3 tsp. Sel Gris sea salt and pepper to taste



    Prepare Salad ingredients and toss in mixing bowl.  In a separate mixing bowl, whisk the dressing ingredients together.  Add dressing to lettuce and fruit and toss to coat evenly.
