Ginger Cream Cookies

Ingredients

  • 1/2 cup sugar
  • 1/3 cup shortening
  • 1 egg
  • 1/2 cup molasses
  • 1/2 cup water
  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1/2 tsp cinnamon

Frosting:

  • 1/4 cup softened butter
  • 2 cups powdered sugar
  • 1 tbsp milk or heavy cream
  • 1 tsp vanilla

Instructions

  • Preheat the oven to 400°F degrees.
  • Mix sugar and shortening together. Add egg, molasses and water. In a separate bowl, combine all dry ingredients. Add dry ingredients to the molasses mixture and mix well until combined. Refrigerate dough for at least 1 hour.
  • Drop dough onto silpat and bake for approx. 8 minutes. Once cookies have cooled, add the frosting to each with your pastry bag.

Notes

Normally I double or triple this recipe because they go fast at our house!
