Blueberry Banana Baked Oatmeal Squares

Ingredients

  • 2 1/4 cups Bob’s Red Mill Old Fashioned Rolled Oats
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup ripe mashed bananas (2 large or 3 medium bananas)
  • 3/4 cup almond milk
  • 1/4 cup agave syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)

Instructions

  • Preheat oven to 350°F degrees. Place Square Mold on Perforated Baking Sheet and set aside.
  • In a large mixing bowl, mix together the oats, cinnamon and salt. Set aside.
  • In a separate bowl, mix together the mashed banana, milk, honey, eggs and vanilla extract until fully combined. Add the wet ingredients to the dry ingredients and mix until everything is well incorporated. Gently fold in the blueberries. Pour to mixture into the prepared baking pan and smooth out into one even layer.
  • Bake for 30-40 minutes or until the top is set and light golden brown. (Mine is usually perfect around 35-36 minutes.) Remove from oven and allow to cool for 10-25 minutes. Slice and serve warm, or cool completely.
  • Option: Drizzle with our blueberry balsamic before serving.
