Roasted Delicata Squash
2 delicata squash
1-2 Tbl Herbs de Provence oil
1 tsp salt of choice (I love our garlic salt flakes or our natural salt flakes)
Wash squash well, no need to peel. Cut squash in 1/2 and scoop out the center seeds. Using our mandoline, slice squash very thinly (I like the thinnest setting on my mandoline). Toss squash rings evening with oil in our mixing bowl and place single layer on your bonMat (that is sitting on your perforated baking sheet). Sprinkle with salt and roast at 400 degrees for 12-15 minutes depending on how thick you sliced the squash.
