Sous-vide Egg Bites

Course Breakfast


  • 5 eggs
  • 1/2 cup shredded Gruyere or Swiss cheese
  • 1/4 cup lowfat cottage cheese
  • 1/4 tsp Sel Gris salt
  • 2 slices cooked bacon, chopped
  • fresh cracked black pepper


  • Preheat oven to 275°F degrees.
  • Add the eggs, cheese, cottage cheese, salt, and pepper to a blender and blend on high for 20 seconds until light and frothy. Place mini muffin tray on your perforated baking sheet. 
  • Fill the shapes almost all the way to the top with the egg mixture. Divide the chopped bacon equally among all of the muffin tins and bake in the oven for 40-45 minutes, or until the center of the egg bites are just set. Remove from oven and let cool for 5 minutes.  Enjoy!
  • I usually double or triple this recipe when I make it.  The recipe as is above will make approx. 12 egg bites.
