Peas & Bacon Crustless Quiche

Course Breakfast


  • 6 slices bacon
  • 5 eggs
  • 1/2 cup heavy cream
  • 1/4 tsp sweet paprika
  • 1/4 tsp cayenne pepper
  • 2 tsp Dijon mustard
  • 1 cup frozen peas
  • 3 oz shredded Gruyere cheese
  • salt & ground black pepper


  • Preheat the oven to 375°F. Place bacon on Flexipat Waffle Tray or Deep Flexiflat and bake 15-25 minutes, until crispy. Cool slightly and chop.
  • In a medium bowl, add the eggs, heavy cream, paprika, cayenne, Dijon and some salt and pepper; whisk to combine. Add the bacon, peas and Gruyere; fold to combine. Add mixture to Daisy Mold or Small Round Mold.
  • Bake until just set, about 30 minutes. Let cool slightly before serving.
