White Bean Chicken Chili

Course Soup

Ingredients

  • 3 cups chicken (cooked & shredded)
  • 2 tsp FRENCH PANTRY oil of choice
  • 1 yellow onion (chopped in Eco-Chop)
  • 1-2 cloves garlic, minced
  • 1 can diced green chilies (4 oz.)
  • 1 tsp FRENCH PANTRY Chicken Herb Blend
  • 1 tsp FRENCH PANTRY salt of choice
  • 1 tsp FRENCH PANTRY pepper of choice
  • 1 tsp ground cumin
  • 5 cups reduced sodium chicken broth
  • 1 can white beans (15 oz, rinsed & drained)
  • 1/2 cup sour cream or plain Greek yogurt
  • Juice of 1 lime
  • 4 pieces bacon (already cooked and chopped in Eco-Chop)
  • 1 avocado, sliced
  • Fresh Cilantro to garnish
  • Lime wedges to garnish

Instructions

  • Heat oil in a large saucepan over medium heat. Add onion and garlic and saute for 2-3 minutes until onion is translucent.
  • Add green chilies and cook for another 1-2 minutes. Add chicken and seasonings and stir to combine.
  • Add broth and increase heat to medium-high. Stir in the beans and cover to simmer for 10 minutes. Remove from heat and add sour cream, lime juice and bacon.
  • Serve with fresh avocado slices, cilantro and lime wedges.
