BBQ Chicken Pizza

Ingredients

  • Prepared pizza dough of choice (Check out my Gluten Free Pizza Dough or our FRENCH PANTRY dough mix)
  • 1 boneless skinless chicken breast, cut into cubes
  • 1/2 cup BBQ sauce of choice, divided (we like Sweet Baby Rays)
  • 1/2 tbsp FRENCH PANTRY EVOO
  • 1-2 cups Mozzarella cheese, shredded (use to your cheese liking)
  • 1/2 cup Gouda cheese, shredded (we like Smoked Gouda best)
  • 1/2 cup red onion (chopped in Eco-Chop)
  • 1-2 tbsp cilantro (chopped in Eco-Chop)

Instructions

  • At least 2 hours ahead of time or overnight, add chicken cubes to ¼ cup BBQ sauce to marinate
  • Preheat oven to 450°F degrees. Place Bonmat on Perforated Baking Sheet and set aside.
  • Cook chicken in Saute pan over medium heat until chicken is cooked through (approx. 3-5 minutes), set aside to cool slightly.  (You can also cook chicken well in advance and store in the refrigerator until ready to bake pizza.)
  • Prep prepared dough as necessary.
  • Place prepared dough on Bonmat and add toppings in the following order: BBQ sauce, gouda cheese, half of mozzarella cheese, chicken, red onion, remaining half of mozzarella cheese and then cilantro.
  • Bake 10-14 minutes or until desired browning on crust is reached and cheese is nicely cooked and starting to brown as well.
  • ** If using my Gluten Free Dough, please note the crust cooks alone for 8-10 minutes before adding toppings and cooking the remaining 10-14minutes.
